The Cupuassu is a plant native to the Amazon, found widely in the wild, when it can live to 80 years and reach more than 30m high.
In the north, this vegetable is multiplied by grafting, budding or grafting and by seeds.
The young plant requires partial shade and shade for adults and can be cultivated in the understory or in intercropping systems.
This tree is fast growing, branching abundant, where the young leaves are pink and covered with hair and the leaves have developed a dark green tint.
The flower cupuaçu is small, cream-colored purple, and pollinated by small native bees, stingless. In this plan there is need for cross-pollination, where pollen from flower to a tree should be taken to another tree flower, for pollination between flowers of the same tree do not produce fruit or fertilization.
Fruits undergo maturation within 4 to 5 months, falling to the ground when ripe and should be collected daily. Staying at room temperature are in satisfactory condition for consumption or processing for a week.
The ripe fruit brown, hard shell, wood and breackable. Its flesh is yellow or whitish bark and emerges with ease. It reverses about 30 to 40 seeds and acid tastes and smells nice.
The best known varieties are the cupuassu: cupuaçu - round (small fruit rounded); cupuacu - castor bean (fruit elongated, larger, with very thick bark and heavier) and cupuaçu mamau - mass (rounded fruit without seeds).
The bark cupuassu represents about 50% of its weight the remaining 30% of pulp and 20% of seeds.
The processing or pulp removal is done with scissors or a manual or machine-hulled.
The cupuassu pulp is used for juices, jams, ice creams, custards, pies, cookies, cakes, etc.
Its seed produces a light chocolate of good quality (cupolate).
The fruit rind is used as organic fertilizer or animal feed.
